Can I make this sauce ahead?
This sauce should store well in the refrigerator for one week without any problems. The high acidity from the lime juice and vinegar will preserve it.
What is the difference between this sauce and the original Vietnamese or Thai Garlic Chili Sauce?
Those traditional versions typically contain fish sauce which contribute saltiness and a distinct flavor. They also tend to have more sugar in them to balance the use of more vinegar instead of the high amount of lime juice in our version.
What if the sugar is taking a long time to dissolve?
If you have trouble dissolving the sugar, let the mixture rest for 10-15 minutes after the initial stirring. During this time, give the sauce a stir every now and then. Eventually you should have no crystals of sugar in the bowl.

- ½ cup lime juice (about 4 limes)
- 2 tsp rice vinegar
- 2 cloves garlic, chopped fine
- 2 each red thai chili, dried or fresh, chopped fine
- 3 tbsp granulated sugar
- ½ tsp kosher salt
